Today Shiloh Farms customer service rep Beth is sharing one of her favorite cold weather recipes:

“There are few things better than having a hot, hearty breakfast to look forward to on a chilly morning and during these blustery, cold winter months, one my favorite recipes to make is this Whole Grain Cereal Bake!

I’ve never been a fan of instant oatmeal – sure it’s convenient, but the result is usually bland, soupy, and unsatisfying. However, after coming across a recipe in an old cookbook, I tried my hand at making baked oatmeal and was surprised by how much I enjoyed it. With a thick, almost chewy texture and all-around better flavor, this is a meal that sticks with you. Even better – I can make a batch ahead of time, then enjoy a hot, filling breakfast each morning!

This recipe takes things to the next level by using a combination of Shiloh Farms Whole Grain Cereals (currently 25% off at ShilohFarms.com!). I always keep a container in my freezer filled with a variety of Shiloh Farms cereal flakes. Whatever I happen to have on hand – remnants from other bags, samples from work – gets mixed in, so the combination is always changing. Each variety adds a slightly different flavor and texture.

When finished and ready for eating, I will warm up a bowl of cereal and top with my favorite locally made yogurt. It always hits the spot and is so wholesome and delicious, I don’t just eat it for breakfast – I’ve also been known to have it for lunch or even as a late night snack!”


Hearty Whole Grain Cereal Bake with Almonds

Ingredients:

3 cups SHILOH FARMS Whole Grain Cereal (I used a mix of wheat, spelt, & barley here)
1 cup SHILOH FARMS Maple Sugar
½ cup SHILOH FARMS Sliced Almonds
½ cup SHILOH FARMS Wild Blueberries (or dried fruit of choice)
2 tsp. baking powder
1 Tbsp. cinnamon
1 tsp. salt
1 cup milk
2 large eggs
½ cup butter, melted
½ cup unsweetened applesauce

Directions:

  1. Preheat oven to 350°
  2. In large mixing bowl, combine dry ingredients (through salt) and stir to incorporate
  3. In separate bowl, whisk together milk, eggs, butter, and applesauce; add to dry ingredients and mix well
  4. Spoon mixture into greased 9×9 baking dish; bake in preheated oven for 40-50 minutes
  5. Remove from oven and allow to cool slightly; serve warm, topped with milk or yogurt

Variations:
1. Substitute blueberries with golden raisins, cranberries, or chopped bing cherries.
2. Add coconut and chocolate chips in place of the fruit for something a little different.
