Making organic cocoa powder is a very detailed process. The cacao beans are harvested in split open pods and allowed to ferment which softening their natural bitterness. Then, the beans are roasted and hulled to expose cocoa nibs, which creates chocolate liquor that is pressed to reveal the rich cocoa butter. This separates the chocolate liquor into two products: cocoa butter and cocoa solids. To make cocoa powder, the cocoa solids are pressed again to create a product called press cake. Press cake is then dried and ground into cocoa powder. The final taste of organic cocoa powder is very bitter, which gives a deep chocolate flavor to baked goods, making it perfect for brownies and chocolate cakes.
