Easy Weeknight Chili


It’s nice to eat a home cooked meal, especially when you don’t have to slave away in the kitchen!  Try this easy weeknight chili recipe that was modified from one we found at lowfatrecipes.about.com.  Included below are the directions for both a meat and a vegetarian version, so no matter what your family’s chili preferences are, we have you covered!

Ingredients:

Meat Chili Directions:

  • Coat the inside of a 4-5-quart crockpot with a thin layer of extra virgin olive oil. Place chopped onions and carrots at the bottom of the crockpot.
  • Brown ground beef in a skillet sprayed with some extra virgin olive oil. Season the meat with the chili powder and cumin. Cook until the meat if fully browned.
  • Remove spiced ground beef with a slotted spoon and place on top of vegetables in crockpot. Add kidney beans, pinto beans, jalapeno peppers and crushed tomatoes. Cook on low for 6-8 hours.

Vegetarian Chili Directions:

  • Coat the inside of a 4-5-quart crockpot with a thin layer of extra virgin olive oil. Place chopped onions and carrots at the bottom of the crockpot.
  • Toss prepared beans with a drizzle of extra virgin olive oil, chili powder and cumin. Add kidney beans, pinto beans, navy beans, jalapeno peppers and crushed tomatoes to the crockpot. Cook on low for 6-8 hours.
